As the tradition goes, when starting a new year you want to be looking forward, not backward. A pig always looks forward as it roots which symbolizes this thought. One thing is for sure, you don't want to consume poultry on New Year's Eve or Day. The superstitious know that anyone who eats poultry on this holiday will lose their happiness because "all good luck and happiness fly away with the bird's feathers."
What about the sauerkraut? Sauerkraut is made of cabbage and the green color of cabbage symbolizes wealth and prosperity. Who wouldn't want to encourage prosperity in 2025? The Germans would also wish each other as many riches as there are shreds of cabbage in their sauerkraut.
